Coming from the Department of Human Nutrition at the Ohio State University, Dr. Melgar-Quiñonez discusses definitions of food (in)security, the policy, social and physical environments that lead to food insecurity, the commitments made at the World Food Summit, and more. He also shows the global trends in undernourishment and food insecurity, and ways in which researchers can measure food insecurity in different parts of the world. Dr. Melgar-Quiñonez also describes his personal research, the aim of which is to develop a more accurate tool to measure food insecurity around the world.
